I got this from my sister-in-law Maureen, who got it from some magazine. They are yummy, easy, and gluten-free.
Pre-heat oven to 325.
Beat together 1 egg, 1 c. peanut butter, 1 tsp. vanilla, and I c. sugar.
Okay, so they’re not sugar-free. Get over it.
Put small scoops (I rolled mine into balls.) on a parchment lined cookie sheet, or on a cookie sheet with silicon or sprayed with the healthy oil spray substitute for Pam that I have posted under food. If I ever learn how to link, I’ll make it easy for you, but till then, search.
Flatten criss-cross style with a fork.
Opt: Sprinkle with crushed peanuts or other nuts.
Bake at 10-12 minutes till lightly browned.
Don’t move off the sheet for storage till completely cooled.
Store only if you have not eaten them all.
